My kitchen is overflowing with apples right now, is yours?
I’m putting them in everything I make and I’m not even tired of them yet!
This recipe is a can’t-miss. I love the combo of tender rice and crunchy apples and it has that sweet and savory thing goin’ on.
Wild Rice & Apple Salad
2/3 cup wild rice, cooked and chilled
½ cup coarsely chopped apple
2 tsp. dried cranberries
1 tsp. walnuts, chopped and toasted
2 tsp. balsamic vinegar
1 tsp. olive oil
1 clove garlic, minced
¾ tsp. Dijon mustard
¼ tsp. orange zest
sea salt and black pepper to taste
In a bowl, combine rice, apple, cranberries and walnuts.
In a smaller bowl, whisk balsamic vinegar, olive oil, Dijon mustard, orange zest, garlic, sea salt and pepper.
Drizzle dressing over rice mixture and toss to coat.
