Sweet Young Coconut

I’ve been feeling a little lackluster this week after a recent trip to the West Coast. Yes, I’m easily jetlagged πŸ™‚ … so I picked up a young coconut on my trip to Whole Foods last night. I had heard some horror stories about opening these things but I was determined to tackle the chore. Unsure of how to proceed, I did a quick google search and happened upon these super easy illustrated instructions at rawguru.com.

In no time, I had opened my coconut and was sipping it’s sweet water! I felt instantly revived.

After finishing the water, I scraped out the meat with a spoon and refrigerated it – I’ll use it in tomorrow’s morning smoothie.

Coconut tops my list of favorite superfoods. Not only is it delicious, it is anti-bacterial, anti-fungal, anti-viral, alkalizing, energizing and a source of healthy fats needed to support and strengthen bones.
