Fall is my absolute favorite time of year and living in New York City means that an apple orchard is never more than a car or train ride away.
In my opinion, you can never have enough apples when they’re in season because not only can you grab one as an easy on-the-g0 snack, you can also add them to your salads. Here’s one I made the other night that David went crazy for (yes, my mine loves greens!).

Apple and Spinach Leaf Salad
For the salad:
1 c. spinach
1 c. radiccio
1 sliced apple (Granny Smith recommended but use what you have!)
½ red onion, thinly sliced
½ c. alfalfa sprouts
¼ c. toasted pumpkin seeds
For the dressing:
1 Tbsp Dijon mustard
2 Tbsp balsamic vinegar
1 clove garlic, minced
sea salt and black pepper
Combine all salad ingredients in a bowl, whisk together the dressing ingredients in a separate bowl. Pour the dressing over the salad and toss to coat.
That’s all? Yes, you’re done. Now go eat!
