I love to eat in season and these two recipes – one for a smoothie and the other for squash — are two of my recent favorites. The spices in the smoothie are warming and fragrant and the sauce on the veggies is creamy and savory.
Chai Smoothie
I found a recipe for a Chai smoothie on the Internet but it involved some complicated process involving seven tea bags. Soooo not my cup of tea! Still, it had me craving chai so I decided to whip up my own recipe:
Coconut or almond milk
1 frozen banana
a small amount of frozen coconut (if you have it – I saved this from when I recently opened a young coconut)
ground cardamom
cinnamon
ground clove
Blend!
I topped mine with Udi’s gluten free granola (and even blended 1/4 cup of it into the smoothie itself – I’m picky about my granola and this is the best (store bought) I’ve found! I’ll be posting some homemade granola recipes soon 🙂
Steamed Squash and Vegetable Extravaganza
This recipe was inspired by My Life Recipe. It’s super simple and totally yummy!
She writes, “Put squash cubes into your steamer, along with chopped up carrots, onion, kale and garlic.
Steam for about 20-30 minutes, or until everything is very soft. Eat with a bit of salt & pepper or whatever your favorite seasonings are (turmeric? cayenne? tamari?) OR create a delicious sauce. The sauce pictured below is a mixture of a small amount of each: tahini, white miso, coconut milk, tamari, ume plum vinegar, turmeric, cayenne & sage. People have said it tastes better than cheese. No joke.”
