Memorial Day Grill Healthy Recipes

Hello from The Hamptons!

I’ve been so busy launching my Total Reset Plan that I’ve left my blog readers hanging for a couple of weeks. That’s not like me, but a girl’s gotta sleep!

I promise I’ll get back on track with blogging soon but in the meantime, I couldn’t let you go into Memorial Day weekend without any healthy recipes for your grill.

This lentil burger recipe is one of my favorites and it also makes an appearance on The Total Reset Plan.

Ingredients
3 cups water
2 cups lentils
1 medium onion, chopped
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons tamari soy sauce
1 tablespoon umeboshi vinegar

Directions
Boil water. Add lentils, reduce heat to simmer and cook uncovered for 40 minutes until lentils become soft and lose their shape. While lentils are cooking, sauté onion and garlic in olive oil for 10 minutes. Add garlic and continue sautéing another 5 minutes.
Remove from heat and set aside with remaining ingredients.

Preheat the oven to 400 degrees (skip this step if you plan to grill the burgers). When the lentils are finished, transfer to large mixing bowl and cool in freezer for 10 minutes. Remove from freezer and add all other ingredients and mix well. Use a hand mixer or blender to combine into a chunky paste (Note: not all ingredients need to be combined until smooth, there should be whole lentils still visible. Form into patties, 4 inches in diameter and ¾-inch thick. Place patties on a lightly oiled cookie sheet and cook 10-15 minutes in the oven or throw on the grill.

I also love grilled pineapple.

Ingredients
2 pounds assorted plums, peaches, and nectarines (halved and pitted)
Olive oil
Greek yogurt

Directions
Heat grill to medium-high. Drizzle plums, peaches, and nectarines with olive oil and grill, cut sides down, until juicy and charred, 2 to 4 minutes. Remove with a metal spatula and serve with a dollop of yogurt.

P.S. I would omit the yogurt.

I have been wanting to try @matcha_116 since I had heard good things and it's a short walk from SoHo in Greenwich Village. There was no line so I was happy. 

The interior is bare bones which is totally fine with me, but I wouldn't necessarily say we got a warm welcome when we walked in. We were the only customers. 

I thought this woman was a customer, but it turns out she was making the matcha! The woman who took my order was on the other side of the counter. 

This was the set up. 

I ordered the16 oz Uji matcha over ice. Milk options were oat or whole. I chose oat. Honestly, the matcha was 10/10. Strong and smooth, just like in Japan. Would totally go back.
