During her coaching session the other day, my client mentioned she had some chia seeds and cacao powder around and needed a recipe to put them to use. Hmmm …
Chocolate chia seed pudding came to mind for both of us, but I didn’t have the measurements to hand.
Chia seeds are a powerful superfood that are easily digested and aid weight loss by keeping you full and reducing cravings. When mixed with liquid, they form a “gel” absorbing ten times their weight in water and also provide hydration. At a raw foods workshop I attended recently, the presenter praised the chia seed for saving her in airports and other rare times when she found herself traveling with nothing she could eat. She simply threw a handful into a bottle of water!
And as if that isn’t enough, chias are the richest plant source of Omega-3 which reduces inflammation and they also control blood sugar by slowing down how fast our bodies convert carbohydrates to simple sugars.
After my client’s coaching session, I did some research and found this easy recipe. Literally two minutes prep time and some stirring. Nothing else.
Ingredients:
2 c. almond milk
2/3 c chia seeds
2 tsps raw cacao powder
2 tsps raw honey (I used coconut sugar, agave nectar would work too)

Directions:
Stir together the almond milk, chis seeds, cacao powder and sweetener. Let the mixture sit for 30 minutes, stirring every 5 minutes until it thickens. Sweeten to taste with raw honey or stevia. Garnish with fresh berries.
This made a huge serving, so cut the recipe by half if you’re eating for one!
