The humidity has let up a bit but it’s still sweltering in NYC. After yesterday’s morning run, I couldn’t wait to make one of my favorite juice recipes – pineapple mint juice. It’s super easy, tasty and refreshing, especially after an intense workout.
Pineapple Mint Juice (from — where else? — The 3 Day Cleanse)
2 cups chopped, fresh pineapple
1 1/2 cups ice
10-15 fresh mint leaves
Blend until smooth
The juice started out as the consistency of a smoothie but melted to become more juicy by the time I got to work. It was the perfect start to my day!
Tomorrow I’m looking forward to trying the Vegan Overnight Oats from Oh She Glows as a new breakfast adventure. The jury’s out because I’m pretty sure I’m a juice-or-smoothie-for-breakfast kinda girl. I’ll keep you posted.
