The first weekend of Summer came and went and left me with a nasty cold – my first in at least 6 months! One of the ways I keep my immune system strong and re-build it when it takes a hit is by getting a daily dose – or three – of greens. You can never eat too many greens and I make it a habit to have them three times a day: cooked or raw in a salad, smoothie or juice – or with this ice pops recipe.
But with the humidity as high as it’s been, I’ve been playing around with frozen treats, like a summer ice pops recipe. They’re a fun way to sneak greens into your day, kids love them and they cool you down.
These two variations are packed with way less sugar (and more nutrients), than anything you’ll find at the store.
The first is an Evolution Fresh Summer Ice Pop that’s incredibly easy to make. Just shake up your favorite bottle of Evolution Fresh green juice like Sweet Greens or Essential Greens and divide the contents into popsicle molds. Freeze for several hours and enjoy.
The second, though it doesn’t contain greens, is an I Quit Sugar-inspired Creamy Coconut, Avocado and Strawberry Ice Pop
