Simple Spring Veggies Where I Need to Be

The sun is out, the temperature is finally above 50 degrees and I couldn’t be happier. Last weekend, David and I spent some time in Vermont to squeeze in some final days of skiing before the season ends. I love Spring skiing because it means my hands don’t get cold.

Our delayed flight got us home well past midnight and the next day I was craving veggies. We were both immersed in catching up on work so we didn’t want to spend a ton of time cooking. I grabbed some asparagus (in season) and broccolini (David’s favorite) and threw them in a steam basket.

When in doubt, steam.

I give this tip to my clients because it’s fast and a really healthy, light cooking method (perfect for spring weather). It sounds boring but you can always dress up your steamed veggies for flavor with some olive oil and lemon juice, fresh herbs or a homemade sauce or vinaigrette.

So that’s what I did.

I made a simple vinaigrette with a few staples.

It was a little sweet and a little savory, but didn’t overpower the natural flavor of the veggies.

Simple Spring Vegetables with Homemade Vinaigrette 

1 bunch broccolini, trimmed
1/2 bunch of asparagus, trimmed
1 Tbsp. shallot, chopped
1/4 cup olive oil
2 Tbsps. mirin, rice wine vinegar
1 Tbsp. apple cider vinegar
1 tsp. tamari
1-2 splashes of ume plum vinegar

Steam the veggies, covered, over a pot of boiling water until fork-tender.

Whisk together the shallots, olive oil, mirin, apple cider vinegar, tamari and ume plum vinegar.

Remove the veggies from the pot and plate, pour the vinaigrette over the top and toss to cover completely.

You could add some sea salt and black pepper or fresh herbs but this is seriously good without extra seasoning because of its unique flavor.
