In honor of St. Patrick’s Day, I’m bringing you this easy recipe for shishito peppers. Decidedly not Irish, the recipe was created by a native of Ireland (my boyfriend) and they are green. Plus, you’ll be doing a jig when you see that these only take 2 minutes to make.
Shishito peppers have been popping up on lots of restaurant menus these days so when we saw them for sale at Eataly last week, David grabbed a bag and then cooked up this tasty appetizer.
These guys have lots of Vitamin C and most taste sweet, although there is an occasional spicy one in the bunch. You’ll know by feeling how many seeds it has (just give it a little shake).
Shishito Peppers
Crush with a mortar and pestle, sea salt, black pepper and sesame seeds
In a skillet or wok, heat 2 Tbsps olive oil on medium heat and add the sea salt/sesame seed mixture
Add the peppers (about 3/4 – 1 lb) and toss them around in the oil so that they are thoroughly coated and glistening
Sautee for a couple of minutes, keeping them moving until you see the skin start to blister slightly
Transfer to a serving bowl, let cook slightly and finish with a drizzle of sesame oil and a sprinkle of sesame seeds and coarse sea salt.
