Last week in Miami, David and I ate at Seaspice, a restaurant that easily became one of my favorites in the area mostly because of their Plant Bowl but also because everything we ordered was just so good. And the outdoor table we had overlooking the river was pretty sweet too. When I saw the Plant Bowl on the menu – and read its description – I knew right away I wanted to order it. I’m usually sold on anything in a bowl, but even more so the second I saw that it was a complete plant-based meal on its own (you can also add more protein to it – chicken, tuna, shrimp or salmon) with a variety of textures and flavors.
- Forbidden rice
- Black-eyed peas
- Pickled blueberries
- Kale
- Watercress
- Garlic sprouts
- Shaved asparagus
- Basil-avocado pesto
I loved the plant bowl so much that I had to recreate it on my own at home. I was able to do so with a few substitutions based on what was available at the Farmer’s Market.

Layer all the ingredients in a bowl – Seaspice used a tilted glass bowl like this – which was perfect for seeing all the layers. Everything is more fun in a bowl – I don’t think I’ll ever get tired of the trend.
