My boyfriend and I have been avoiding sugar this summer, but that doesn’t mean we don’t still have a sweet tooth. As I was flipping through this month’s issue of Whole Living, I happened on these Rawesome Strawberry Shortcake Bars (they called them Strawberry Oat Bars). Since I’ve been eating a highly raw diet, these were just the thing to satisfy my raw-finity and our preference for a little something sweet.
In a use-what-you-have moment, I subbed almonds for the macadamia nuts and also added 1/4 cup shredded coconut. I have an inkling that cashews would also work well too. Strawberries are in season now, so take advantage. Any other berry would work well or try a banana and a shmear of raw nut butter as a variation.
Eating raw foods fuels the body with live enzymes. The body uses what it needs and gets rid of the rest. It is a highly supportive way to eat during warmer months because it keeps the body light, cool and energized.
1 1/2 c pitted dates
1/4 c raw macadamia nuts (or other nut of choice)
2 Tbsp rolled oats
Pinch sea salt
1 c strawberries, hulled and thinly sliced
1/4 c shredded, unsweetened coconut (optional)
Directions:
Pulse everything in a food processor until combined.
Press the mixture into the bottom of a 9 x 5 inch loaf pan.
Mash half the strawberries and spread on top.
Top with remaining strawberries and slice.
Not only are they pretty, they taste just like strawberry shortcake and are boyfriend-approved!

I love raw recipes, especially desserts! And the fact that they are BF-approved makes me want to try them even more! You know if the BF likes it, it's gotta be good!
