Pina Colada Smoothie

I was playing around in the kitchen this week. Prepping for my two upcoming smoothie-making workshops when this cold, creamy concoction was born.

Pineapple. Coconut. Need I say more?

This is definitely one of those, I’m-missing-the-beach-so-I’ll-bring-the-beach-to-me kind of treats. So good, I almost made seconds, but I refrained.

Pina Colada Smoothie

Half the meat and all the water from a young Thai coconut
1/2 a frozen banana
1/2 cup fresh or frozen pineapple
1 tsp. all-natural, organic peanut butter
1 cup ice
1/2 tsp. maca powder (optional)

Blend and serve cold!
