On-the-go Flavorful Fall Snack: Roasted Winter Squash Seeds

Earlier this week I used Kobucha squash to make a Fall Veggie Bake.

As I scooped out the seeds, I was reminded of the roasted pumpkin seeds my mom used to make when we carved pumpkins for Halloween. I didn’t want to waste the seeds so I set them aside and turned them into a healthy snack.

Just one cup of these seeds provides up to 12 grams of protein, satisfies hunger and is a great source of Omega 3 and 6 fatty acids which protect heart health and brain development as well as reduce inflammation. Best of all they are easy to throw in a bag or container and carry with you for a snack on the go.

Crunchy Roasted Winter Squash Seedsย 


What you’ll need:

The seeds of one Winter Squash of your choice (Butternut, Pumpkin, Kobucha, Delicata)
1 Tbsp Extra Virgin Olive Oil
1 tsp cumin
sea salt to taste

What to do: Cut the squash open, scoop out the seeds and set aside. Rinse with cold water and remove any leftover strings of squash. Spread onto a foil or parchment paper-lined baking sheet and let dry for several hours.

Preheat the oven to 275. Add the seeds to a bowl with the olive oil, sea salt and cumin and mix together, making sure the seeds are completely coated. Spread back onto a baking sheet and bake for 30-45 minutes. I baked mine a bit longer because I like them extra crunchy.

Cool and snack away!

The cafe itself had the cutest decor. The matcha had no flavor and all I could taste was the almond milk. 

Refreshing and not too sweet. The blueberry lemonade was the overarching flavor followed by the more bitter matcha. Perfect balance. 

Just a strawberry matcha. Nothing special and not the best I've had. 

This was an authentic Japanese spot with a premium matcha experience. They hand whisk it in front of you  and explain how they make it. I picked up a few tips. The matcha was authentic and rich. Only oat and whole milk options.

Not a huge fan on oat milk in matcha because I think it overpowers the flavor. Overall, this was the most authentic like you'd get in Japan. 

Tbh, this was a basic coffee shop matcha but I loved the coffee shop itself. I made the mistake of agreeing that the syrup which was a sweetener. I don't like sweetened matcha so that knocked a star off. 

The most underwhelming of all. Drinkable but basic. Not bad, but I had too many other really good ones to measure against. 

This place has it all. The vibe, tbe energy, the neighborhood, the creative drinks, the community and a nice staff. 

This was the most delicious matcha I would give this place 1000 stars if I could. 

The place was bustling but they kept it moving and the staff was friendly despite the crowds and heavy drink orders. 

An authentic matcha experience with a modern edge. Seriously the best matcha and experience I've had at a matcha cafe.
