Weekend in Vail | Marissa Vicario

To celebrate two years of marriage, David and I spent this weekend in Vail, Colorado. He really wanted to get one more weekend of skiing in before the season ends and spring skiing is my favorite kind, so we decided on Vail since it’s only an hour and a half drive from Denver.

Weekend in Vail | Syrup | gluten free pancakes

We flew into Denver on Thursday night and stayed overnight downtown. ย We were awake bright and early because of the time change and I was famished so we went all out on breakfast, complete with gluten-free pancakes – one of my favorite indulgences when I’m on vacation – at Syrup, a local breakfast favorite, which was convenientlyย located across the street from our hotel.

Later Friday afternoon, we drove to Vail and made it to Four Seasons Vail just in time to stroll around town and enjoy a glass of wine by the fire at the hotel bar. We were exhausted so we re-scheduled our dinner reservations and munched on a few small plates at the hotel before a hot bath and an early bedtime.

On Saturday, we hit the slopes after breakfast and were spoiled with the perfect day. Sunshine, warm temps and some good snow at the top of the mountain. We had lunch outside on the mountain and finished the day with some shopping in Vail Village. I’m obsessed with these ski gloves I got which are as warm as they are fashionable. The ones pictured are sold out, but you can find similar here, here, here and here.

We had dinner at Nobu’s Matsuhisa which was everything you would expect from a Nobu restaurant. They were wonderful at accommodating my dietary restrictions, and after dinner, we had a nightcap at the hotel around the fire pit, which became our favorite place over the course of the weekend.

Sunday started slightly more overcast so we got a late start on skiing, but we still had plenty of time on the slopes. Since it’s late in the season, the crowds were manageable which no doubt contributed to my enjoyment level. We had lunch outside again – this time at Tavern on the Square – in Lionshead Village which is adjacent to Vail Village. There were plenty of vegan and gluten-free friendly menu items here which I always appreciate.

Dinner Sunday night was at Sweet Basil, a popular Vail mainstay. By this point, David and I were dined out so we shared a few things, our favorite were the Brussel Sprouts with golden raisins, pecans and Ras-al-Hanout. The. Best!

We slept in a little on Monday morning and woke up to snow which quickly gave way to sunshine. ย We had a quick, healthy breakfast of oatmeal at a local coffee shop, Yeti’s Grind, before driving back to Denver to catch our flight back to New York.

Vail is such a friendly, laid-back ski town so it was the perfect place for us to get some much-needed relaxation and enjoy some warm days of skiing.
