Whoa, what a week! We returned from Vail late Monday night and since then I feel like I’ve been playing catch up. Needless to say, we winged it all week on meals which was enough motivation for me to spend most of yesterday meal prepping like crazy so we have healthy meals all week.
But let’s back up to Friday when I caught up with a friend for drinks at Mercer Kitchen at The Mercer Hotel. NYC was freeeezzzzing and we were both exhausted so it wasn’t a crazy night, but it was great to catch up with an old friend.
Saturday started early with a Bar Method class and then more teacher training for most of the afternoon. After I finished at the studio, I stopped by the Bandier warehouse sale and picked up two pairs of leggings – I was so thankful for no line and further discounts by the time I arrived. That evening was date night so David and I went to one of our favorite neighborhood spots for dinner, Covina. We always get the hummus with crunchy Farmer’s Market veggies, because it’s the best
On Sunday, we brunched at Bluestone Lane Cafe. David had the Brekkie Board, half an order of avocado toast and half an order of granola. I went with the the Coco-Nut Porridge and Beet Latte.
After brunch, we walked from the West Village to SoHo and then back home, where I spent the rest of the day meal prepping. I made smoothie bags, roasted carrots and beets, steamed kale, quinoa, salmon, lentils and chopped some raw vegetables.
It feels so good to be ready to go with healthy meals for the week. A few hours in the kitchen on a Sunday truly saves precious time and prevents unhealthy choices during the week. Worth it!
