Five for Friday, Elizabeth Stein, purely elizabeth

05/11/12

Fellow IIN grad Elizabeth Stein has a personality so sweet it’s no irony she created a line of baking mixes. But they’re not like the other baking mixes. purely elizabeth baking mixes are are all-natural, vegan, made with high quality ingredients and free of gluten and refined sugar. And the ancient grain granola is so addictive that it has become a staple in my home.

Elizabeth and I first met while I was studying at IIN and she was the health coach I had chosen as part of the program curriculum. We had a lot in common, including how we both arrived at IIN. We’ve kept in touch and watched each others’ businesses grow.

Q1. What is the #1 wellness practice you live by? That thing that you do every day without fail because it revs you up from the inside out.

A. Working out. I need to get some form of exercise to feel energized and know that I am doing something good for my body.  Lately though I have been trying to carve out time at night for a relaxing soak in the tub. Trying to add in more ME time which has been doing wonders.

Q2. The premise of the blog is that wherever you are in life, is exactly where you need to be. How did you get to where you are today?

A. I was working in a job where I was really unhappy. It was having a big effect on my overall well-being and I started to search for something else. I knew that my job had to be more inline with my passions and values. I couldn’t go to work day after day doing something meaningless. Somehow I stumbled upon IIN and knew immediately I had found my calling.  I was passionate about health, and holistic living.  I worked with clients one-on-one as well as taught cooking classes.  One thing lead to another and I had an idea to start a gluten free baking mix product line. This seemed like the perfect combination of my interest in health and business background.  In October 2009, I launched purely elizabeth and now absolutely love what I am doing.

Q3. What was your biggest transformation along the way?

A. While at the Omega Institute for an IIN conference, I gained the confidence to go after my dreams, no matter how BIG or far fetched it seemed. That day, a month before starting purely elizabeth, I got the courage to write down my unlikely dream, and toss it in the campfire.  Frankly from that day, I’ve never looked back.

Q4. If you could only own five items, what would they be?

A. laptop, vehicle, my favorite summer dress, vitamix

Q5. What is the theme song for your life right now and why?

A. It’s A Beautiful Day by U2.

This is such a happy, uplifting song and feels inline with where my life is right now.  I feel really lucky that everything seems to be going in the right direction at this moment.

Both were family/kid-friendly and brought us out to the most stunning beaches: Elizabeth A. Morton National Wildlife Refuge (Sag Harbor) and Shadmoor State Park (Montauk) πŸ’šπŸ’‹πŸ₯Ύ
