Fall Harvest Smoothies

Two weeks ago I made post-workout smoothies for a sweaty crowd at a Löle Showtique NYC meet-up hosted by Mahri Relin of Body Conceptions.

Mahri’s workout is no joke. I was so intrigued I went back the following week to get in on the action and the next day my abs and butt were screaming. My abs never get sore so you know this workout was intense.

But I digress. Back to smoothies. They’re one of the best ways to re-fuel after a workout and I always like to re-create familiar Fall flavors as a healthy smoothie which is what inspired the Pumpkin Spice and Apple Pie Smoothies I made that day.

I created the Apple Pie Smoothie after making a large vat of apple puree in my blender which I show how to do in this video. Click here to watch.

Apple Pie Smoothie

1/2 cup unsweetened applesauce or apple puree (get the recipe for no-cook apple puree in your blender)
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 frozen banana
1 heaping tsp. pecan butter
3/4 cup non-dairy milk, like almond milk
1 cup ice
1 tsp. ground flax seed or flax oil

Blend until smooth and enjoy. Serve cold.
Serves 1-2

 

Pumpkin Spice Smoothie

1/2 cup pumpkin (1/2 can)
3/4 cup non-dairy milk, like almond milk
1/2 frozen banana
1 cup crushed ice
1 tsp. vanilla extract
1 tsp. pure maple syrup
1 heaping tsp. cashew butter
dash ground ginger
1/2 tsp. cinnamon
1/4 tsp. clove
1/4 tsp. nutmeg (or replace cinnamon, clove and nutmeg with 1/2 tsp. pumpkin pie spice)
1 tsp. maca powder

Blend until smooth and enjoy. Serve cold.

Serves 1-2

All I wanted to do was stay inside and rest, but a big dump of snow is so rare in NYC that I didn't want my 6-year-old to miss out, so I told her we would take a walk to check it out after lunch, a promise to myself to get out for fresh air as much as it was to her. She added that on our walk we should get Hot Chocolate - it was a date! So after lunch, we bundled up and made the best memories I could have asked for on a simple walk to get Hot Chocolate. We came back with cold hands and warm hearts. 💚💋❄️
