Thanksgiving and a Build-Your-Own Salad Bar

For the past few years, it seems my family has created new Thanksgiving traditions. Like two years ago when my sister and I planned and cooked the entire meal. That was a Thanksgiving to remember.

But this year’s Thanksgiving may have topped all the others with the addition of a salad bar.

I come from a family of doctors and nurses so it’s a rare occasion when everyone can get a holiday off at the same time. This Thanksgiving my sister would be getting off of work late and my dad would be going in even later. In the hours that overlapped, David and I flew into town and everyone agreed ahead of time that a lighter meal would be better instead of heavy Thanksgiving fare. Β So we all got together at my mom and dad’s house to enjoy a spectacular salad bar.

Maybe I’m just late to the party but I think this idea is genius and had never considered anything like it for entertaining any time of year, much less during the holidays.

Needless to say, I’m hooked on it.

  • Mixed greens
  • Broccoli florets
  • Marinated asparagus
  • Feta cheese
  • Shredded carrots
  • Thinly sliced cucumbers
  • Artichoke hearts
  • Pickled beets
  • Shredded carrots
  • Red and orange peppers
  • Olives
  • Cherry tomatoes
  • Scallions
  • Peas
  • Roasted red peppers
  • Crispy tempeh
  • Shrimp cocktail
  • Smoked Salmon
  • Focaccia
  • Homemade basil vinaigrette

On Saturday we still had our usual Thanksgiving feast.

But in retrospect we all prefer the salad bar.

The meal on the left was more food …but digested A LOT easier than the meal on the right.
