Summer is certainly not for staying inside slaving away over a hot stove. This summer I’ve managed to “cook” more than usual but I haven’t sacrificed a moment of time spent outdoors. My secret is in simple recipes that require little to no time on the stove or in the oven.
These are a few of my favorites you’ll find on the Total Reset Plan, 4 weeks of done-for-you recipes so you don’t have to think, just follow the plan.
Bok Choy Summer Salad
Combine in a serving bowl:
1 large head of bok choy or 4-6 smaller heads, chopped
1 Tablespoon chives, chopped
1 small peach, diced
¼ cup slivered almonds, toasted
Drizzle with this light but flavorful vinaigrette:
1 teaspoon onion or shallot, minced
1 Tablespoon lemon juice|
1 teaspoon Dijon mustard
2 teaspoons mirin, rice wine vinegar
1 ½ teaspoons organic extra virgin olive oil
Quinoa Taboule
1 cup quinoa
2 1/4 cups water
1 cucumber, diced
1 tomato, diced
1 bunch mint, minced
1/2 bunch parsley, minced
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
Sea salt to taste
Wash quinoa. In a pot bring water and salt to a boil and add quinoa. Reduce heat to low and simmer covered for 20 minutes or until grains are fluffy and water is absorbed. Fluff quinoa with a fork; cover and let sit for 10 minutes. Transfer the quinoa into a large bowl and combine all ingredients. Mix gently and add lemon juice, olive oil and salt to your taste.
Banana “Ice Cream”
1 peeled, frozen banana
1 Tbsp sliced almonds (or other raw nuts on hand)
Freeze 1 peeled banana. Puree in a food processer or blender. Top with sliced almonds.
