Ingredients

c.
coconut oil
melted
1/4
c.
tahini
2
eggs
2-3
ripe bananas
mashed
1/4
c.
non-dairy milk
1
tsp.
baking soda
1
tsp.
vanilla extract
1/2
tsp.
sea salt
1/2
tsp.
cinnamon
1 3/4
c.
cassava flour
1/4
c.
dark chocolate chips
optional
Instructions
Preheat oven to 350 degrees.
Coat a 9×5-inch loaf pan with oil or line it with parchment paper.
In a large bowl, whisk coconut oil and tahini until blended
Whisk in all other ingredients except flour and chocolate chops one at a time until combined. I like to leave chunks of banana.
Fold in flour and stir with a spoon or spatula until combined.
Add in chocolate chips if using.
Pour the batter into the pan and bake for 60 minutes or until a toothpick comes out clean.
