THREE SIMPLE RECIPES FOR FISH // As a pescatarian I always have a freezer full of seafood and for the past few months it’s been stocked with fish from @sitkasalmonshares + I’ve had these 3 easy peasy recipes on heavy rotation because there’s no time to be fancy with a baby!

Now for the recipes! I like all of these with a hearty fish like cod or salmon.
1️⃣ Marinated: Mix up a simple marinade by combining minced garlic, olive oil, lemon juice, salt, pepper and fresh or dried herbs (I like rosemary, oregano sage and thyme). Place fish in a shallow bowl or baking dish and season on both sides with sea sat. Pour the marinade over the fish and refrigerate for a few hours. Bake on a parchment-lined baking sheet at 400 for 15-20 mins.
2️⃣ Simply Seasoned: Drizzle a little olive oil on the fillet and season with a pinch of salt. Add your seafood seasoning of choice into a dish or shallow bowl and dip the fish fillet into it until coated. Bake at 400 for 15 minutes.
3️⃣ Miso Glazed: Spread a Tbsp of sweet white miso in a thin layer over the top of each fillet. Place a slice of
lemon in top. Bake at 400 for 15-20 mins.

Exercising outside with a mask or face covering is hard and uncomfortable. In short, it 🤬 sucks. For everyone. For me, because I’m postpartum, out of shape and am just getting back to running after more than a year. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

LACTATION COOKIE RECIPE // Where are all my new Moms? 🙋🏻‍♀️ You're going to want to SAVE THIS RECIPE for these not-too-sweet, but totally addictive lactation cookies!! 🍪

When I was starting my breastfeeding journey, I was trying everything to increase my milk supply. I found a lactation cookie mix I looooved but it was high in sugar and I knew I could do better by making my own, nutritionally dense cookies. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
This recipe is less sweet and packs in alllll the galactagogues (foods thought to increase milk supply) like Brewer's Yeast, Oats and Flax Seeds. Not only did I cut way back on the sugar, I used #glutenfree flour + replaced butter w/ pb for added healthy fat and protein. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀

⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
HEALTHIER OATMEAL CHOCOLATE CHIP LACTATION COOKIES 🍪 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 C peanut butter or almond butter
1 C @nowfoodsofficial dark brown sugar
1/2 C coconut sugar
2 eggs
2 tsp vanilla extract
1 1/4 C @nowfoodsofficial gluten free flour
1/2 tsp baking soda
1 tsp salt
3 C oats
1 C chocolate chips
2 Tbsps @nowfoodsofficial Brewer's Yeast
2 Tbsps @nowfoodsofficial Flax Meal
4 Tbsps water
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Heat oven to 350
Combine flax meal and water and let it set for 3-5 minutes until it forms a gel
Beat nut butter, coconut sugar and brown sugar until smooth
Add in eggs and continue to mix
Add flax/water mixture and vanilla extract
In a separate bowl, combine flour, Brewer's Yeast, baking soda and salt
Add dry ingredients to wet ingredients
Fold in Oats and chocolate chips
If the mixture is too dry, add 1/2 C water as needed
Scoop by the Tablespoon onto a parchment-lined cookie sheet and flatten in the center with the back of a spoon
Bake for 12 minutes and let cool

In my pre-baby life I was a Productivity Queen. Simply put, I loved to get stuff done. When the stay at home orders started, I dreamed about everything I would finally get to check off my to-do list. It turns out that being quarantined with an infant while your spouse works all day isn't exactly a recipe for productivity.⠀⠀⠀⠀⠀⠀⠀⠀⠀
